The chemical reaction between quicklime and the acid in the juice produces calcium carbonate and water. The calcium carbonate then forms a solid precipitate which can be easily removed from the juice. In addition to neutralizing the pH level, the addition of quicklime also helps to remove impurities and organic matter from the sugar juice. These include colorants, nitrogen compounds, waxes, and cellulose. This improves the quality of the final sugar product by reducing the color, improving the flavor, and extending the shelf life.
